Paramount traditions in the year of the Horse
Grand Park City Hall’s iconic Cantonese restaurant draws on the superb culinary traditions of the Chinese to present dishes to renew the bonds of kinship and friendship. Don’t miss the Golden Shunde yusheng ($88) prepared with a whole hamachi and deep fried silverfish, garnished with fish roe. And yes – the "gold" in its name refers to edible gold flakes.
Making its debut is the Auspicious Harvest pen cai ($298 nett for 6 pax), luxuriantly braised in natural collagen from the inclusion of nourishing pig trotters. It takes five hours for this labour intensive dish to be prepared, but it’s worth it when you tuck into the sliced abalone, sea cucumber, whole conpoy, prawn balls, roast duck, roast pork belly, soy chicken and more.
