Mention American breakfast, and one inevitably thinks of pancakes. Smeared with butter and drizzled with maple syrup, there's something immensely comforting about fluffy hotcakes. To satisfy our love for pancakes, several eateries now offer all-day breakfast. We check out their pancakes: how do they stack up against one another?
CRITIC'S PICK Cedele
For melt-in-the-mouth hotcakes with sides
Moist, pillowy and gorgeously-browned, the hotcakes at Cedele manages to push all the right buttons. Although these melt-in-the-mouth pancakes feel light, they are satisfyingly hearty. Neither too thick nor too thin, each serving comes with two pancakes that are just right. Cedele's pancakes ($13.90) come in either blueberry or banana and are served with vanilla butter, maple syrup a small salad and a side of either bacon or sausage. The vanilla in the butter is a nice touch, but the maple syrup is rather forgettable. Available only at Cedele's all-day dining outlets at Wheelock Place, Paragon, Raffles City and Great World City.

For pancakes with an Asian twist
Egg-y, slightly charred and drizzled with gula Melaka syrup, the pancakes here contain an Asian twist to the American breakfast favourite. Instead of the usual maple syrup, the use of spiced palm sugar (we detected hints of cinnamon) is an addition that works rather well. The pancakes have a rather strong egg-y taste, but they are deliciously soft and moist. The crispy bits around the edges are very addictive as well. Besides syrup, the pancakes come with a generous dollop of lightly whipped vanilla cream. Our only grouse is that the pancakes come drizzled with syrup – we'd rather the gula Melaka served on the side so we can adjust the amount we prefer. We tried the plain (two for $9), which are not as good as those served with mixed berries (two for $11) and shredded coconut, gula Melaka and mee chiang kueh butter (served only at the Queen Street outlet, $12).

For good-value pancakes with flavoured butters
Appearances can be deceiving, for the pancakes at Strictly Pancakes taste a lot better than they look. We tried the short stack (two pancakes for $5.50) and found that the pancakes would definitely benefit from a nice, browner crust. But the texture is excellent. The pancakes are light and porous, with a lovely melt-in-the-mouth texture. They are served with a choice of flavoured butter (salted, unsalted, garlic and herb, or rum and raisin, or all) and maple syrup. The pancakes are also subtly salty, which provided a nice contrast against the sweet syrup. Take note: on weekends, only breakfast sets are served. The four breakfast sets ($13 to $15) come with chilled or hot coffee. The All-American ($15) offering takes the form of flat, round cakes served with strips of crisp bacon, sausages, quail eggs and grilled tomatoes.

Luxurious pancakes with a view
Prive’s homestyle pancakes ($13) are a trio that are neatly stacked and are served with fresh strawberries, bananas, honeycomb, whipped cream and a choice of maple syrup or gula Melaka. The pancakes themselves are evenly browned and immaculately round and the addition of honeycomb is an extravagant touch befitting the luxurious surroundings. As a bonus, you also enjoy a million-dollar view of the marina and its pretty yachts, as well as the soothing breeze of the sea.

For thick, fluffy pancakes
Come with an appetitie: the pancakes ($12 for two) at Hatched are monster-size. Each gargantuan pancake here is about the thickness of three regular-sized pancakes. In spite of that, these are evenly cooked and moist. The porous texture and slightly yeasty taste of the pancakes hint at a generous dose of buttermilk in the batter. Served with maple syrup and berry compote, at Hatched's egg-heavy menu, the pancakes are a welcome respite.
