Christmas is just around the corner. This is the time of the year when turkey cooking- and buying-panic sets in for those who are obsessed about having the best-tasting turkey at their Christmas dinner. Even if you enjoy cooking, it’s hard to make sure you have the perfect turkey ready on Christmas day (not to mention the lack of oven space to fit in a big bird).

Buah Keluak Turkey

Buah keluak is a traditional ingredient used in Peranakan cooking. And this year, Marina Mandarin has given the big bird a Nonya twist. The turkey is marinated with Nonya buah keluak paste and served with chestnut and mushroom glutinous rice, Nonya chap chye (mixed vegetables) and buah keluak sauce. The turkey is baked to perfection for an East-meets-West experience.

Charcoal-baked Malai Turkey MOST INNOVATIVE FLAVOUR

Here, the traditional roast turkey is given a refreshing, Indian twist. Chef Eric Neo of Intercontinental Hotel created this new and bold flavour to spice up the festive season this year. The turkey is seasoned using a marinade consisting of Indian spices such as masala, cumin, coriander, with yoghurt as a natural tenderiser for the meat. The bird is then baked at a low temperature in a tandoor oven using charcoal, giving the meat a distinctive smoky flavour. This delicious succulent turkey, brined with Indian spices, gives an exotic new life into the usually bland and boring turkey.
