Buah keluak is a traditional ingredient used in Peranakan cooking. And this year, Marina Mandarin has given the big bird a Nonya twist. The turkey is marinated with Nonya buah keluak paste and served with chestnut and mushroom glutinous rice, Nonya chap chye (mixed vegetables) and buah keluak sauce. Charcoal-baked Malai Turkey MOST INNOVATIVE FLAVOUR

Here, the traditional roast turkey is given a refreshing, Indian twist. Chef Eric Neo of Intercontinental Hotel created this new and bold flavour to spice up the festive season this year. The turkey is seasoned using a marinade consisting of Indian spices such as masala, cumin, coriander, with yoghurt as a natural tenderiser for the meat. The bird is then baked at a low temperature in a tandoor oven using charcoal, giving the meat a distinctive smoky flavour.
