The setting: This French pizza chain is housed in a big open space on the second floor of the maze that is Orchard Central, accessible by escalators and the shopping centre lifts (not the carpark lifts). The space fits 96 people comfortably.

Despite being a chain in a shopping centre, Flam’s is more inviting than you’d expect: it’s casual, cheery and rustic, thanks to the extensive use of wood that extends to the heavy beams in the ceiling. It’s got a Swiss air, though this is a French chain serving French classics, most notably flammekueche. The pizza-like bread originated in Strasbourg in the Alsace region in northern France.

While Flam’s is not the first to serve this bread in Singapore — Le Bon Marché along Bukit Timah Road offers a yummy version — it touts itself as a flammekueche specialist with variations on the theme. There are also kid-friendly, half-sized flammekueche for the young ones.

The food: The thin-crusted flammekueche is served authentic: in a square slice, not triangular. Have the classic traditional version made with bacon, onion and a cheese mix (creme fraiche, cream cheese and spices) for $12.90.

Less usual versions include the roasted goat’s cheese pizza with honey ($18) — a strange-sounding combination but it works. Finish off the meal with more flammekueches — Flam’s has a range of sweet flams for dessert. You can’t go wrong with the pizza topped with sliced bananas and chocolate chips ($6.50).

If all that dough proves a little much, the rillette (shredded duck cooked in fat, and then formed into a paste with the same fat, $14), and the melted goat’s cheese salad ($12) will set you off on the right foot.
