i agree...the taiwan shilin night market is really cool! everywhere i walk i wld see something tt looks appetising. last yr i went taiwan for a 1wk holiday but i only had 1 evening at tt market, so i din get a chance to try alot of the food ><
  8.
haha i went taiwan last year too! the night market there is glorious, make me feel like eating everything. singapore pasar malam still must improve lah! always that few food, no innovations.

bobian, u think our local vendors enjoy running around like caravan?
taiwan night mkt/bazaar r permanent located... while our local ones run around from 1 district to another. hardly anyway for them to improve their menu.

the only 1 night bazaar that should be compared against, is the bugis village night bazaar... bt even that, can't hold a candle to shilin
  9.
crunchychoconut... scully you are my tour mate... haha!
i think another problem is in taiwan, night market is somwhere everyone goes! in singapore, how mnay teenagers will go pasar malam for shopping?! no incentive for pasar malams to improve lorh.
  10.
maybe pasar malams can do some publicity? and have some permanent pasar malams instead of all temporary ones..these might enable ppl to notice pasar malams more. cos now i feel that pasar malams kind of blend into the surrounding..no incentive for ppl to notice n visit them. every time i see one i'll just walk past, i dun rly feel the desire to visit it.

BA: haha maybe we were tour mates! we nv know...(umm sidetrack abit...when i went on the taiwan tour, there was a guy in the grp who was my same-level jc schoolmate but we din know of each other's existence until the 2nd last day when our mothers talked to each other then we found out...heh XD )
  11.
crunchychoconut: wah schoolamtes somemore! my tour group got a lot of same age as me but different jc people. found out through our mothers too -.- we like more anti-scoial then our parents haha!

yeah and they should change their image! besides the food, the image of pasar malam is cheap and auntie clothings. haha.

put it this way, in taiwan there's lesser red tapes for vendors to come out in the night to operate. even if the unlicensed vendors get into trouble with the law enforcers, they'd be given 2nd, 3rd, 4th... how many more chances.

while in sg, all the red tapes n regulations for ppl to try their hand a entreprenuership. need to apply for hawking license/ register company, auction/ bid for stall placements etc... needless to say, getting caught for hawking without license.

in reality, youngsters & tourists still visit bugis village, bt the sadly bcos of the inconveniences, we wont be able to see the night mkt scene in sg grow & bustle as healthily as those abroad.

i realised that some of our roving pasar malam tend to have more than 1 or 2 vendors selling almost the same foods. sometimes u'd find 3-4 selling the same food...

Donch tell me you are in Bukit Panjang or Choa Chu Kang area!
  13.
MN i tried the crispy fried chicken from tampines mrt bazaar alr! it's rly nice!! but i still think shihlin's XXL crispy chicken has a tastier crust. anw which type of chicken from tt bazaar is nicer, the crispy chicken, honey chicken or the salted type that comes in small pieces?
  14.
haha nope im in the woodlands/ admiralty area!

The XXL chicken chops from Shihlin tend to taste dry and "powdery" for me.
Perhaps because they cut corners by using a different chicken part for the meat and/or hammering to flatten and extend the size.
The original ones from Taiwan actually use thigh meat and butterfly-cut it for the size. (according to Taiwan TV show)

The ones available at the pasar malam here are not butterfly-cut, so they are thicker, juicier and you can taste the fibre of the meat and marinate.

As for which is better, it is always best to try them all for yourself to determine your favourite.
I like the honey chicken because of the sweet marinate and salted chicken for the extra crunch.

    what is butterfly-cut?

ya...the meat of the pasar malam ones are juicier and smoother than the original taiwan ones. i ate the taiwan one before but it tasted more like chicken breast to me, cos the meat is kinda tough.

there's a kiosk (its name is in korean so i duno how to type here) which has branches at vivo, bugis junction and taka and it sells similar fried chicken thigh also. but i dont really like that one cos the only chilli they provide is chilli sauce. i think this type of fried chicken goes better with chilli powder.

its nice to know that some pasar malams around r having a wide spread of variety to choose from. the last 1 i spotted... the food variants was too little to choose from.

come to think of it, the taiwanese style chicken cutlet would taste all the better if u DIY... cos u get to control how crispy u want it to be
  16.
huh, i love my taiwan chicken leh. its so nice and juicy and oily and fragrant. mmmm...
  17.
i love the crust of taiwanese chicken cutlet! it's tasty n flavourful n crispy :D for other types of chicken i eat (like chicken rice chicken) i only eat thigh n drumstick but for taiwanese chicken cutlet i dun mind if its breast meat, as long as the crust is nice...

well, to me, the choice of the cutlet meat is important, cos after deep frying, will tend to be a lil dry on the inside. the chilli/ flavoring powder also quite crucial. i recall in taiwan during training in the field, those roving stalls that follow us deep into terrain, used to have some of the nicest cutlets i've ever tasted

Butterfly-cut is when the meat is sliced similar to the way Ya Kun halves its toast before the kaya is spread, except it is not cut through and the meat remains in one piece and can be "unfolded".
