A great recipe to ensure that you have a lovely crust every time, you can even bake this in an oven if you wish to be healthier. Alternatively, you can try this with good quality pork for a great katsu! Serves 6 Recipe by Mervyn Pha
Ingredients: 6 x 150g fresh red snapper fillets 1 tablespoon garlic powder 3 eggs, beaten 1 ½ cup dry breadcrumbs 1 cup plain flour Salt and pepper Canola oil, for deep frying 6 wedges lemo
Method: 1. Season the snapper pieces with some salt, pepper and garlic powder. 2. Heat the oil in a pan over medium high heat. 3. Season the flour with some salt and pepper. 4. Lay neatly the fish pieces, seasoned flour, beaten egg then breadcrumbs for an assembly line production.
5. Coat the fish with the flour, egg, breadcrumbs (ensuring the fillet is very well and evenly coated every step of the way).
6. Carefully lower them in the oil and fry them for about 3-4 minutes depending on the thickness (turning once halfway). 7. Serve each piece with a wedge of lemon.
