Date and almond loaf cake

This recipe for rich butter cake is great served with tea or even as a gift.
Step by step
Main Ingredients
  • 100 g butter
  • 80 g castor sugar
  • 1/8 tsp salt
  • 2 eggs
  • 150 g preserved dates
  • 3 tablespoons orange juice
  • 1 teaspoon orange zest
  • 30 g almonds
  • 80 g self raising flour
  • 40 g almond flakes
  • 2 tablespoons coarse sugar
Glaze:
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest
  • 70 g icing sugar
Method
Step 1 
Pre-heat oven to 180ْC and grease a 10cm x20cm loaf pan, set aside.
Step 2 
Remove seeds from the dates. Cut dates and spoon orange juice over them. Set aside covered for 10 minutes.
Step 3 
Meanwhile using an electric beater fitted with a paddle attachment, beat butter and sugar until creamy, add eggs ones at a time beating well in between each addition.
Step 4 
Fold in grated zest, ground almonds, dates and flour.
Step 5 
Pour into greased loaf pan, drizzle with coarse sugar and almond flakes.
Step 6 
Bake cake at 180ْْC for 30 minutes or until skewer inserted in the centre of cake comes out clean.
Step 7 
Cool cake.
