This little slice of the Mediterranean is an explosion of flavours from sweet to tart and floral with a luxurious consistency.

45ml Beefeater 24 gin
5ml Mathilde peach liqueur
30ml lemon juice
15ml egg white
10ml sugar syrup
2 barspoons homemade fig jam
1 dried fig, sliced, and a sprig of mint leaves for garnish
Special equipment needed:
1. Put all ingredients into a shaker with ice.
2. Shake and strain into a teacup.
3. Garnish with slices of dried figs and mint leaves. Serve.
