Almonds, coriander and lime; each have contrasting flavours and aromas but somehow they conspire to make one revitalising beverage. It's also got an Asian-European fusion feel to it.

Preparation time: 10 minutes
Cooking time: No cooking required
3 sprigs coriander (leaves only)
1 large lime
Special equipment needed:
1. Cut the lime in half and muddle it in a rock glass.
2. Add the coriander leaves and muddle them as well.
3. Fill the glass halfway with crushed ice and add the amaretto.
4. Stir and top the glass with more crushed ice before garnishing with coriander leaves.
