The perfect accompanying drink to a plate of freshly shucked oysters, The Slick Pearl combines the flavours of different approaches to serving the molluscs in one glass – acidity, spiciness and herbaceousness.

Recipe serves 1
Difficulty: Easy
Preparation time: 10 minutes
Cooking time: No cooking required

45ml Chase rhubarb vodka
45ml pink grapefruit juice
10ml sugar syrup
3 pieces fresh ginger
3 sprigs fresh coriander
8 drops of ghost pepper bitters

Special equipment needed:

1. Place the vodka, grapefruit juice, sugar syrup, ginger and fresh coriander into a shaker with ice.
2. Shake, and strain into a champagne flute.
3. Finish with the ghost pepper bitters.
4. Serve with fresh oysters.
