| Hands down, best Thai food in Singapore!
My search for ROYAL Thai food in Singapore has ended! I've found the only place where I can actually stomach the food!
And my tongue loves it too - not one time was it on fire.
You see, I cannot stand "Authentic" Thai food, or should I say, touristy Thai food. It aims to please with nothing but pure MSG, sugar, salt, and chillies - my enemy #1. If you have to kill flavour with chilli, then why even bother having any cooking skills at all?
Most people think of Thai food should be spicy and laced with chilli. This is far from the truth.
In all Thai dishes, there must always be a balanced harmony of flavours. No one flavour should jump out more than another. That's the mark of Royal Thai food - well-balanced flavours. And Thanying at Amara Sanctuary does it well.
For a start the Pomelo salad was the perfect balance of fresh, plump and succulent pomelo bits, coconut cream and a hint of chilli. PERFECT!
Then came the Stuffed Wings - delicate, not greasy, juicy and full of lean meat (unlike those places that rely on fatty chicken bits to make it tasty).
For mains, my favourite had to be the Steamed Seabass. There is no other word to describe it than pure perfection. It was 1) the right size, 2) delicately flavoured (without heaps of chilli and lime to drown out the freshness of the fish), 3) it was tender.
Both Green and Red Curries were also very good. NOT SPICY! But full of flavour - can taste the lemon grass, aubergines, basil etc, all without heavy coconut flavour as well.
This is indeed true ROYAL Thai cuisine indeed.
Service was polite, helpful, efficient and obliging.
Ambience - lovely.
My only gripe is it's a tad pricey, but hey given it's the only place in Singapore that serves decent (and very very good) Thai food, I don't mind forking it out over and over again!
