Layers of fresh juicy strawberries, vanilla genoise and strawberry creme coated with puff pastry flakes baked to a golden brown perfection.
As the description suggests, the strawberries were fresh, juicy and sweet. The cake was baby soft and the cream were light on the palates. Oh and not to forget the puff pastry flakes and base which added a twist of creativity and crunch to this common cake. In short, heavenly~~

Lychee Rose ($7.90++)
Lychee rose mousse with juicy lychee jelly and Valrhona ivory chocolate glaze.
The first sentence that popped out of J's mouth was "Oh! This reminds me of lychee agar agar!" The mousse was velvetly smooth with subtle taste of rose. Sweetness hit the right spots and the cake was literally melted in our mouths. Dainty, light and refreshing. Who would have thought that lychee & rose can be so compatible?

Hazelnut Pear Torta ($6.90++)
Crunchy hazelnut cake with caramelized pear slices.
Soft and moist cake with generous slices of pear. The cake pulled off rather brilliantly on its own. However, we couldn't really make out the crunchy hazelnuts within the cake, unless the description refers only to the hazelnut toppings.

Matcha sponge and azuki bean compote layers in a yuzu infused bavarois.
1 Caramel was able to combine the strong aroma of Yuzu with macha pretty well. Bravarois was light and creamy, texture similar to that of french mousse. Together with the macha sponge, this interesting creation is certainly one-of-a-kind.

Peanut Butter Cheese Tart ($6.90++)
Peanut butter cream cheese tart with a hint of lemon and a crunchy layer of hazelnut praline.
This baby won our hearts over during our previous visit to 1 Caramel. We love peanut butter, we love hazelnut praline. Marriage of slightly salty smooth creamy peanut butter cream cheese with sweet crunchy hazelnut praline gave us the best of both worlds. Purrrrfect!

Chocolate lovers out there, this is the cake for you! We adored the rich, bittersweet chocolate ganache but wished that the hazelnut praline layer could be thicker. For those who are hoping to enjoy a piece of ferrero rocher cake, perhaps you might want to check this out.

We applaud the exquisite presentation of this brownie, but it failed to score on its taste. The brownie came as rather dense and dry. Just like a cool mighty knight on his fine horse, what's a brownie without its exuding warmth and its accompanying icy knight?

The carrot walnut cake was crumbly and dry, and its cream cheese icing was so forgettable that we could not recall how it tasted like. Perhaps the only saving grace was the strawberry and dried apricot.

Red Miso Souffle ($12.90++)
The salty goodness of miso in a dessert! Uncover the sweetness within our one of a kind souffle. Paired with yuzu ice cream which complements it very well. 15 - 20 min waiting time.
Thought that was all? Absolutely not! The innovation stemming from this unique souffle aroused our curiosity when we spotted it in the menu. As you can expect, the puffy warm souffle started to deflate and the fragile yuzu ice cream melted as though it was crying for attention, eventually giving way and split into half as it was being passed around for glamour shots. The waitress even reminded us to savour it while it's warm in order to enjoy the souffle. Time was running out and we had to act fast. Despite the aftermath of the phototaking session, the souffle still turned out to be a pleaser. We were swooned by the soft, savoury miso souffle, lightly sprinkled with sweet icing sugar and paired with the sour yuzu ice cream. J found the ice cream to be too sour for her liking though. The rich layers of flavours exploding on our tastebuds in waves definitely brought about a welcoming and refreshing change to the dessert world. Yum!!

one big hearty breakfast
Oct 12, 2009had breakfast for the first time last saturday. Its a rarity to have a cafe that serves up a great breakfast that can fill my aussie stomach. Most cafes here have very small breakfast dishes.

Addicted To Cakes
Oct 20, 2009Lunch on Sun noon, 18/10/09: At the mercy of my primitive biological urges, I’ve been meaning to visit this dessert parlour since the beginning of time. Finally arranged for a before-movie dinner here with Rabbit and Peanut. It was unfortunate that Rabbit had work commitment and flew us a plane. By some happy chance, after church service that fateful day, I bought a copy of Women’s Weekly which came with 1-for-1 cheque book and the first ticket was for the ala carte main course of 1 Caramel! Ahh...God is good.
Since the ticket was to be utilised from Mon-Sun, 12-3pm only, Peanut and I decided to go for lunch instead.
Adorned with ceiling to floor glass panes, the charming little patisserie boasts a collection of 26 cakes, 6 desserts, 6 savoury courses, staggering multitudinous list of beverage, including tea, coffee, cocktails, mocktails and liquid desserts in its online menu. That was not all; when we arrived for lunch, we were given a separate menu card for ala carte brunch items. Altogether now...woah.... I certainly didn’t expect so much from such a small pastry shop whose main focus is the sweet treats.
Does one die from an overdose of Eggs Benedict? I can’t help it. One look at the ala carte menu and I knew that was what I wanted. I think I suffer from obsessive compulsive disorder that I die-die also must seek out the best Eggs Ben in Singapore. My shrink (if I had 1) would be so proud of me. Eggs Benedict ($16 for 2) are run of the mill here. Bearnaise sauce (a variation on Hollandaise sauce) was creamy with a sourish aftertaste. Hm...I can't really assay the difference between the 2 sauces but I’ve had better Hollandaise sauce for Eggs Ben over the past weeks. Sides of rocket salad and tomato were pretty gratifying.
Scrambled Eggs with Sausage ($16) were enjoyable with the delectable mini sausages. I especially liked how the scrambled eggs were freckled with black grinded pepper and the grilled toast, albeit a tad dry was crusty around the edges. Rocket salad and tomato were served as sides for this course as well.
I had perused the online menu prior to my visit and I must say I was stupefied at which cake I should go for! If only I have a bottomless pit for my stomach and a superhuman metabolism that burns all overconsumed calories whenever I binged. Argh. Unfortunately, yours truly is just an ordinary mortal with no superhuman powers, one gotta exercise restraint and astute judgement in this case, as we only have 1 chance to succeed; one chance to cull the right cake to share. Oh well, I love nuts and I sorta love chocolates; Peanut’s a huge fan of chocolate, so Chocolate Praline Mousse Cake ($7.90) it was. And wise we were. The slice of cake was nectarous with alternating layers of decadent chocolate mousse and crunchy hazelnut praline feuilletine. No regrets here!
Watermelon Strawberry & Mint ($8) was refreshing and I’d like to believe the fruits component would do its bit in detoxifying my body which is highly probably overloaded with toxins built up from my unbridled wanton eating habits. Once again, my non-existent counsellor would be so proud of my delusional belief over what a glass of fruit juice would help accomplish.
Final bill includes a Flat White at $5.
Service was amicable. We were offered 4 small pieces of homemade biscuits when the staff realised our order was left out and a good 15-20 minutes had gone by. It successfully placated my slight umbrage as I hate to wait for nothing. I gotta give it to them for admitting the mistake and the effort at service recovery with the dainty cookies. Anyways, we didn’t wait that long, our food was served within 10 minutes after which.
I wouldn’t come back for the mains or savouries but I’d definitely be back to give the other cakes a try. In fact, I’m hoping I’ll be able to return again sometime this week. Keeping my fingers crossed. ;)
Upated on 21/10/09 for an after-dinner dessert on Wed evening: Both Peanut and I were so inebriated with the selection of cakes here, we came back again.
Wanting to see how the it flies in the face of Pine Garden's Lychee Martini Cake, we ordered the Lychee Rose ($7.90). I like how the lychee in the chiffon cake complemented the rose scented "agar-agar" layer. However, we did find the condensed milk on the topmost layer of the cake and the rose cream too cloying. We scrapped the condensed milk layer off to better enjoy the sweet treat. Lychee Martini Cake gets my vote and it's way easier on the wallet at just $2.40 a piece.
Minty Pear Smoothie ($8) was very invigorating with the zesty minty flavor. Very thirst-quenching!
Service is as pleasant as my last visit. No complaints! :)Must Tries

Strawberry Shortcake Rawks!
Mar 9, 2010I love my sweets and usually never pass up a chance on desserts, no matter how full I am. Like I always say, desserts goes down a totally separate compartment in my tummy. No desserts deserve to face cruel rejection especially when they are presented all dolled-up and pretty (read "yummy"). So when we were strolling out of The Cathay after dinner, I couldn't resist stopping by the classy-looking 1 Caramel for some after-meal sweets.
Its Strawberry Shortcake came highly recommended and after tasting it, we could understand why. The freshness of the ingredients was unmistakable - plump, juicy strawberries halves generously embedded in the cake, with a layer of fresh cream and all encased within a flaky puff pastry. Exactly because of its wholesomeness, you will never get that 'jelak' feeling even after consuming the entire slice. My TWG Geisha Blossom Tea made the perfect partner.We had to have chocolate so our other choice was the Moelleux au Chocolat, which is a warm chocolate cake, served with a scoop of milk and honey ice cream. Unfortunately the chocolate cake was dry and lack the richness that all chocolate cake should come with. The ice cream though provided some relief to its impassive choc buddy, tended to the saccharine side of things. If it was replaced with a tangy orange or lime sorbet, it might have improved the dire situation.
We had a good dessert and a not so fantastic one, so its kinda hard to judge if 1 Caramel lives up to the mark. But we enjoyed the fact that its a small cafe with an elegantly quiet ambience that makes it a good place to bond with a bunch of sweet-tooth girlfriends over cakes and tea. Even more amazing was that that the cafe was devoid of crowds, even though it was conveniently located within town. There are simply lots more to try at 1 Caramel and I will want to go back for more.

We have probably walked past this place a dozen times but each time, we will tell ourselves that we will come back for their desserts the next time.
Tucked just beside the Cathay lies a pretty little café called “1 Caramel”. I’m sure many have dined there and enjoyed the cakes. But do they live up to their name? Yes indeed.
Big glass windows and tall white chairs, coupled with an assortment of cakes on display. I like it. 1 Caramel quality cakes are all freshly baked daily.
We had three slices of cakes and some coffee to perk us up on the lazy Sunday afternoon.

Greedy me. I forgot to take pictures of Lychee Rose. This is truly a delight to have. This is certainly a cake that I might consider using for my wedding in the future. Take small little bites of it. The frosting on the top part was good as well as it wasn’t too sweet for my liking. The rose and lychee flavour goes really well together. The cake looks and tasted good.

Chocolate Praline is perhaps one of the best combinations found in a cake. I absolutely love it. Their cake is nicely done and it wasn’t too sweet as well. I can definitely finish this cake up myself.

The folks at 1Caramel places much pride in making their cakes. The main ingredient in strawberry shortcake is, of course, strawberries. And 1 Caramel’s Strawberry shortcake certainly lives up to its name.
There is nothing like the fresh taste of strawberries in a delightful soft sponge cake. To differentiate themselves from the usual strawberry shortcake, 1 Caramel did a pretty good job in adding the puff pastry flakes. Excellent Choice E. It certainly brightens up my Sunday afternoon.
I love their cakes but it will be pinch on my wallet if i were to have it that often.

1 Caramel Revisited!

Are Women really from Venus and Men from Mars? Evidently, our diets do differ on the most fundamental of levels. Most men enjoy cheap food that is massive in quantity, messy(think full rack ribs with much gravy) and not necessarily all that palatable as long as it fills the tummy. Women enjoy their food petite, aesthetically pleasing with a focus on taste and presentation. Men thrive on mains while women on starters and desserts. At least that's my take...
In an attempt to attain the status of a New Age Man, the male equivalent to the Tai Tai, my resolution in the fine art of dessert appreciation had advertently led me to 1 Caramel, a place known for it's chic setting and overpriced albeit laudable desserts.
My company today comprised of 3 medicine undergrads J, S and D, one of whom is a President Scholar from Cambridge, and yes, I do believe in success by association which begs the question of why I am the anomaly and outlier, at least for now haha. S mentioned that the lady who set up 1 Caramel used to be an investment banker. It is always inspiring when individuals are willing to pursue their passions at the expense of personal finances. Kudos to these leaders and pioneers! You have my utmost respect!
I am a sceptic when it comes to the consumption of exotically named chocolate drinks, coffees and teas, especially those pretty looking ones where they add in random ingredients like caramel, peppermint, cocoa powder, fruit syrups, whipped cream with marshmellows and what not, scamming individuals by charging exorbitant prices. Hence, I ordered the classic Hot Chocolate. With a flurry of whipped cream, the hot chocolate was thick and creamy with a bittersweet nutty aftertaste. It's a love hate relationship with the Hot Chocolate here, S and D thought it was good but it just didn't catch J's nor my fancy. Sharing J's sentiments, we even prefer McCafe's Hot Chocolate, the Chocolate here was just too intense for me.
The Spiced Apple Cake is very similar to the English Carrot Cake in terms of texture. Served warmed with a light snowy coat of powdered sugar, it's subtle sweetness appealed to everyone. I imagine it would go very well with coffee or tea.
Since the highly rated Strawberry Shortcake was sold out, I settled for the Chocolate Praline Cake. It was nice, especially the portion with the waffle base. But be warned, it is very heavy, rich and decadent hence by the time I reached the end of the cake which was without the praline base, I was too gelat to eat anymore. Ordering chocolate cake with hot chocolate was a big mistake too on hindsight. My hot chocolate ended up tasting bitter.
I like the staff here. Always beaming with a smile, they are unpretentious and seem to enjoy their work. Though I wasn't thoroughly impressed, the desserts here are still a cut above the average tea lounge and I will definitely be back soon to savour that highly elusive Strawberry Shortcake!

I was left high and dry yet again in my 2nd failed attempt to sample the signature Strawberry Shortcake. Fortunately, my Lychee Rose didn't disappoint. Layers of chiffon, lychee jelly and lychee mousse definitely went well together. Light and not overly cloyingly sweet, my only gripe was the widest portion nearing the end of the cake where there was only lychee mousse which I didn't really like on it's own.
K got himself a Mango Marscarpone Cake. Though not as good as the Lychee Rose, it was still a valient attempt and managed to hold it's own among it's counterparts in 1 Caramel.
I'm not a coffee person, Iced Chocolate being my choice of beverage on a warm Saturday afternoon. Not much to comment, it's roughly the same as TCC's. K did mention his Latte fell short.
Perhaps due to the weekend crowd, service wasn't as attentive as my previous visit.

Wonderful Cakes and Water!
Dec 15, 2009I've been here a few times and this place has yet to disappoint me. Hidden behind the busy road of Orchard, it is a nice, small place to be in. There's also a art gallery beside this cafe.
With its refrigerator at the back of the cafe, where you can take a good look at the nice cakes they have made and displayed, it can be pretty mouth-watering just looking at the cakes.
The first time I was here, I bought about 15 pieces of cakes. Needless to say, I almost tried 3/5 of the varities they have. My favourite: Strawberry Shortcake.
Firstly, I'm not a huge fan of strawberry and normally I would go for tiramisu or some hazelnut or chocolate stuff. Hence, for the strawberry shortcake to win me over, says a lot about this small piece of cake.
The cake is not overly sweet and the cream is not very heavy. Hence, you won't get sick of it after a few mouthfuls. There are also strawberries in the layers of the cake. Something I find it not very common as most strawberry shortcake that I have, only have the strawberry taste and strawberry on top. The cream of this cake also has strawberry taste. One can even mistaken it to be strawberry cream. The best of this cake is yet to come. What's the best that leaves me loving it? The crust at the bottom of this cake. Using cereal-like ingredients, it is crunchy and breath-taking! The crust is unique and I've yet to see anything like it elsewhere!
I wouldn't take away the shine of other cakes there. They are equally nice and at any one time, you can find at least 20 varities of cakes there. What's more, the next and subsequent visit there for me, had me seeing new varities of cakes. It shows that they are not resting on their laurels and are looking to provide consumers with new varities of cakes. This is indeed commendable!
The place is mainly white with high chairs and also some outdoor seats. I never once tried their drinks. Why you might ask. Is it because it's expensive or what not? None of the above! It's just because the water is good enough! Lemon and rosemary! It also aids to take away the sweetness in your mouth and keep you refresh to try the other cakes without worry that the previous you had will affect your taste buds!
Their services are always attentive and are also able to provide sound advice if you are unsure with the huge varities provided.
Overall, I won't stop coming back to this little place and it's really a visit! Try it! You won't be disappointed!Must Tries

Dec 8, 2009Melanie's 1 Caramel is a great dessert shop that also happens to sell tasty food, though the focus is definitely on the spectacular cakes, incredible teas, and traditional coffee drinks.
The service is great and the seats are perfect for people watching on Handy Road. But the cakes, lavish and flavorful, are a treat for the tongue and the eyes. Located next to The Cathay, so it's the perfect place to stop for an after movie treat.Must Tries

Dec 8, 2009I was waiting to watch the latest movie Gammorah at the picturehouse and had some time to spare. Thus, I decided to have a coffee at 1 Caramel to pass some time. I really like the white lay out, although some may find it a little too bright at times. Located off the Cathay building in a stand-alone place at the Luxe, seating may be somewhat limited but I was pleasantly surprise to be able to get a table on a Saturday night.
I ordered a Tea-ramisu which is a lighter version of the usual tiramisu that is served. High in cream, do not be fooled by the light coloured cake as it can feel your stomach pretty quickly.
Service is friendly and attentive. Do keep your volume down or risk your secrets being heard.I also recommend this place for

Addicted To Cakes
Oct 20, 2009Lunch on Sun noon, 18/10/09: At the mercy of my primitive biological urges, I’ve been meaning to visit this dessert parlour since the beginning of time. Finally arranged for a before-movie dinner here with Rabbit and Peanut. It was unfortunate that Rabbit had work commitment and flew us a plane. By some happy chance, after church service that fateful day, I bought a copy of Women’s Weekly which came with 1-for-1 cheque book and the first ticket was for the ala carte main course of 1 Caramel! Ahh...God is good.
Since the ticket was to be utilised from Mon-Sun, 12-3pm only, Peanut and I decided to go for lunch instead.
Adorned with ceiling to floor glass panes, the charming little patisserie boasts a collection of 26 cakes, 6 desserts, 6 savoury courses, staggering multitudinous list of beverage, including tea, coffee, cocktails, mocktails and liquid desserts in its online menu. That was not all; when we arrived for lunch, we were given a separate menu card for ala carte brunch items. Altogether now...woah.... I certainly didn’t expect so much from such a small pastry shop whose main focus is the sweet treats.
Does one die from an overdose of Eggs Benedict? I can’t help it. One look at the ala carte menu and I knew that was what I wanted. I think I suffer from obsessive compulsive disorder that I die-die also must seek out the best Eggs Ben in Singapore. My shrink (if I had 1) would be so proud of me. Eggs Benedict ($16 for 2) are run of the mill here. Bearnaise sauce (a variation on Hollandaise sauce) was creamy with a sourish aftertaste. Hm...I can't really assay the difference between the 2 sauces but I’ve had better Hollandaise sauce for Eggs Ben over the past weeks. Sides of rocket salad and tomato were pretty gratifying.
Scrambled Eggs with Sausage ($16) were enjoyable with the delectable mini sausages. I especially liked how the scrambled eggs were freckled with black grinded pepper and the grilled toast, albeit a tad dry was crusty around the edges. Rocket salad and tomato were served as sides for this course as well.
I had perused the online menu prior to my visit and I must say I was stupefied at which cake I should go for! If only I have a bottomless pit for my stomach and a superhuman metabolism that burns all overconsumed calories whenever I binged. Argh. Unfortunately, yours truly is just an ordinary mortal with no superhuman powers, one gotta exercise restraint and astute judgement in this case, as we only have 1 chance to succeed; one chance to cull the right cake to share. Oh well, I love nuts and I sorta love chocolates; Peanut’s a huge fan of chocolate, so Chocolate Praline Mousse Cake ($7.90) it was. And wise we were. The slice of cake was nectarous with alternating layers of decadent chocolate mousse and crunchy hazelnut praline feuilletine. No regrets here!
Watermelon Strawberry & Mint ($8) was refreshing and I’d like to believe the fruits component would do its bit in detoxifying my body which is highly probably overloaded with toxins built up from my unbridled wanton eating habits. Once again, my non-existent counsellor would be so proud of my delusional belief over what a glass of fruit juice would help accomplish.
Final bill includes a Flat White at $5.
Service was amicable. We were offered 4 small pieces of homemade biscuits when the staff realised our order was left out and a good 15-20 minutes had gone by. It successfully placated my slight umbrage as I hate to wait for nothing. I gotta give it to them for admitting the mistake and the effort at service recovery with the dainty cookies. Anyways, we didn’t wait that long, our food was served within 10 minutes after which.
I wouldn’t come back for the mains or savouries but I’d definitely be back to give the other cakes a try. In fact, I’m hoping I’ll be able to return again sometime this week. Keeping my fingers crossed. ;)
Upated on 21/10/09 for an after-dinner dessert on Wed evening: Both Peanut and I were so inebriated with the selection of cakes here, we came back again.
Wanting to see how the it flies in the face of Pine Garden's Lychee Martini Cake, we ordered the Lychee Rose ($7.90). I like how the lychee in the chiffon cake complemented the rose scented "agar-agar" layer. However, we did find the condensed milk on the topmost layer of the cake and the rose cream too cloying. We scrapped the condensed milk layer off to better enjoy the sweet treat. Lychee Martini Cake gets my vote and it's way easier on the wallet at just $2.40 a piece.
Minty Pear Smoothie ($8) was very invigorating with the zesty minty flavor. Very thirst-quenching!

one big hearty breakfast
Oct 12, 2009had breakfast for the first time last saturday. Its a rarity to have a cafe that serves up a great breakfast that can fill my aussie stomach. Most cafes here have very small breakfast dishes.

Tarts over cakes
Oct 8, 20091-Caramel's the new kid on the block with famous relations like 1-Twenty-Six and One-Rochestor. Nested in between The Cathay and Plaza Singapore, human traffic is heavy throughout the three times I've paid it a visit.
Peanut Butter Cheese Tart ($6.90)
with a hint of lemon and a layer of crunchy hazelnut praline
I particularly loved the tart base with praline, the combination worked for me. The Peanut Butter Cheese topping was a velvety smooth paste atop with a generous sprinkling of chocolate shavings. It did not come across as a dense tart but a nice balance struck.
Sacher Torte ($7.90)
A traditional dense Austrian chocolate cake with pitted dark sweet cherry and kirsch compote and Valhrona chocolate ganache
The companions did not fancy this hugely, leaving it half finished. I found it just ordinary however.
The second visit was hot on the heels of the first as I was still enthralled by this newfound dessert place.
Tropical Fruit Cake ($7.90)
Vanilla Sponge filled with passionfruit mascapone cream
I declare a love-hate relationship towards passionfruit. The only related dessert that has blown my away is The Patissier's Passionfruit meringue and 1-Caramel's magic fizzed out with this particular cake. The vanilla sponge was coarse, lathered with sour passionfruit jam which I did not adore. In all honesty, this looked better in the glass shelf.
Nid d'abeilles ($7.90)
Layers of honey chiboust cream and strawberry jelly sandwiched with crispy almond daiquoise.
The initial choice of pear tart was sold out for the day and the remaining reserved so I settled for this...largely attributed to the florentine on top, completely forgetting how much of a non-fan I am of mousse cakes. The chewy daiquoise was the only saving grace amongst the various layers of mousse, cake and jelly. The flavours did not go down too well for me.
Fraise Pistachio Tart ($8.90)
Layers of pistachio frangipane with mixed berries creameaux scattered with blueberries and garnished with fresh strawberries and oven roasted pistachio nuts
I attempted this during the second visit and ordered this after the first two disappointing cakes. Love the delicious colours of the tart! Was a tempt at first sight with the luscious juicy strawberries. The purple puree tasted much like yam but was infact frangipani. The pistachio paste and frangipani combination was nice but not as outstanding as the peanut butter tart. This time round the tart was less crunchy, slightly soaked through.
And then there was a third visit to perhaps give the Pear Torta a go before I stamp it "Tried and Done".
Hazelnut Pear Torta ($6.90)
Crunchy hazelnut cake with caramelised pear slices
I was most expecting a crunchy tart base given its name but it was just a dense delightful nut cake laced with hazelnuts, glaced with caramelised pear slices and pear! Despite the initial surprise, the cake pulled off rather brilliantly on its own with the flavours well permeated throughout. This ranks as my second favourite amongst the humble list I have attempted.
After three visits in a span of a week and a half and six different desserts later, I declare 1-Caramel's tarts addictive..though I did not find the same infatuation in their cakes. Like any other dessert place, not all are outstanding..wise choices are recommended as a single disappointment could wave you off this place almost immediately. Prices are more affordable as compared to Canele, more variety than Bakerzin...there you find 1 Caramel's snug slot.
Service varies according to the crowds, but overall passable.
