My all time favourite laksa in all of Singapore! The laksa flavour is always consistent, with the right amount of coconut milk and hae bee (dried shrimp). Best thing is, they provide chilli at the side so you can add as much or as little as you like.
Cockles are one of the most important part of the dish - it's not overcooked nor undercooked, you can still taste the freshness of it without it being overly fishy.
Eating the entire dish with a spoon guarantees that every mouthful of beehoon is balanced out with a sufficient amount of soup to satisfy.
I don't live in the East, but I travel there constantly to eat this laksa. It's that good.
