I never know that it has been here at Singapore since 20 over years ago. And it has been establishing well for its own manufacturing pasta. Having a meal at this location its proving to be a merry get-together at a cosy and nice environment.
One must never miss ordering their pasta dishes, we had the black squid one. And the italian dessert - Appetitoso.
Its not good anymore.
Sadly we went today and had a very disappointing experience. We had a beef carpaccio that was so cold it was straight off the freezer. Lying on a bed of not so fresh rocket, limp and frozen.
My partner had squid ink pasta that did not even have squid ink sauce. Neither were the squid and prawn well seasoned. Unfortunately fhe prawns were undercooked and the dish tasteless.
My penne granchio was very mediocre, and the crab meat sparse. The tomato base tasted staright off a can of tomato sauce.
Altogether we paid $70 and truly we were super unsatisfied with the meal. We had always loved this restaurant but tonight was the turning point. We likely would not be back again.
Many of us will be familiar with Pasta Fresca Da Salvatore with its flagship branch along Bukit Timah Road. Servicing quality Italian food at affordable price, Pasta Fresca has been around since 1988 which is a good 25 years. It has expanded with 5 outlets around the island as well as another 4 in China. It is quite an impressive story by itself.
In conjunction with the festive season, Pasta Fresca is having a 5 course Chirstmas Set ($39.90) that is available until31 December 2013. The value for money 5 course set meal comes with a soup, salad, pasta, main course and dessert.
Starting the 5 course christmas set is the Pumpkin Soup with cream and herbed croutons. A rich and hearty soup to whet up the appetite for the rest of the meal.
Next up for the 5 course christmas set is the Rucola and Smoked Salmon Salad. The healthy plate of garden has sauteed mushrooms, walnuts, cheery tomatoes and parmasan shaves. A delightful plate of salad with flavours and different textures.
For the pasta dish of the 5 course christmas set, the Squid Ink Linguine was well received by the diners. Cooked to perfection with a nice al dente bite, I like the use of the red pepper sauce and the hint of lemon zest to balance off the saltiness of squid ink. The only shy of the dish is the prawns. Although crunchy we suspected it was not fresh live prawns as they were lacking in the natural sweetness.
For the 5 course christmas set, there is a choice of main in the Pan Fried Breaded Sword Fish or Grilled Turkey Breast. The breaded sword fish came in a mediterranean sauce and buttered vegetables. The firm meat of the sword fish was pan fried to a delectable bite. The grilled turkey breast with balsamic reduction, rucola, cherry tomatoes and grilled vegetables was surprisingly good. I usually don't enjoy turkey because its meat is tough but the execution was so excellent that I thought I was having pork.
Ending the 5 course christmas set is the Italian's Traditional Christmas Panettone that is served with vanilla gelato and chocolate sauce. The sweet bread loaf went well with the sauces but I thought it was a bit on the dry side.

To celebrate the festive season, Pasta Fresca Da Salvatore is offering a limited time, 5-course Christmas menu till the end of December 2013. Inspired by dishes prepared in South Italy, Pasta Fresca Da Salvatore imports only the freshest ingredients for this special menu.
Ambience at Pasta Fresca is designed to be rustic, comfortable and homely, making you feel as if you've just stepped into an Italian friend's home. Space is carefully laid out and the menu is planned to allow guests to socialise and linger over conversation.
Service at Pasta Fresca flows well with the homely theme, as staff are friendly and welcoming. Attentive and observant in their service, I especially liked that Pasta Fresca staff are unobstrusive, making sure that your dining experience is comfortable. I liked that they check, by feel of your water glass, whether you were drinking warm or cold water. This attention to details was evident throughout the meal.
The Tagliere Misto, from the regular menu, is a platter of cold cuts, including high quality pork salami and spek, with cheddar, goat cheese and whole olives. I loved the authentic taste of the cold cuts, the flavour of the meat really shines through.
The Zuppa Di Zucca E Crema Di Latte is the soup starter on the Christmas menu. A rich and creamy pumpkin soup is served in a cute mug, with cream and herbed croutons. I liked that the soup was well balanced, not too overpowering or underwhelming, and that you can taste the pumpkin flavour.
The Linguine Al Nero In Salsa Gamberi E Peperoni from the Christmas menu has home made squid ink linguine with fresh cherry tomates in a red pepper sauce, which was excellent! Probably my favourite dish of the evening! The prawns were big and meaty, but slightly lacking in the crustacean taste.
The Al Funghi E Salsiccia, or penne pasta in a cream sauce with sauteed mushrooms and home made Italian sausage, is from the regular menu. Loved the taste of the home made sausage, and overall this dish is quite filling!
The other main on the Christmas menu, the Pesce Spada In Panura Su Salsa Alla Mediterranea E Verdure Saltate Al Burro E Prezzemolo features pan fried breaded swordfish fillets, with buttered broccoli and carrots in a pomodoro tomato sauce. I liked that you can taste the tomato is the sauce, a sign of freshness and made by hand, rather than from the canned variety. I also like the texture of the pan fried breaded swordfish fillets, semi-firm but yields to the bite.
Pasta Fresca Da Salvatore Christmas menu is only available till the end of December 2013, and this 5-course set meal costs SGD $39.90 per person. They also offer wine to pair with the dishes. The items from the regular menu are available at all their outlets.
Pasta Fresca (PF) was a pioneer for freshly made al dente pasta. Firm and tasty. We used to only eat dried pasta. His first store at Bukit Timah (near sixth ave) is still there and doing well! We dined at their newer Rochester Mall outlet. Still maintaining their lead in Italian food after all these years !
Food: They allowed us to taste many items on the menu, and my favourites are: penne pasta with home made Italian (spicy) sausages. Al dente, in a cream sauce with loads of sausages. Can eat again. Next in line was the "white" pizza with ham, sausages and rocket salad. Clean tasting, no cheese topping and freshly prepared crush, and finally the plate of Italian cheeses and sliced meat.
We also had cream of pumpkin soup, black pasta with prawns and tomato, plate of Italian cheeses and ham. Loads of rocket in their salad, with cheeses, olives and tomato. Delicious.
They are offering a special menu prepared only during Christmas:
- Salmon salad with sauteed button musrhooms, walnuts, cherry tomatoes and parmesan.
- linguine made with squid ink with tomatoes and prawns
- panfried breaded swordfish with mediterranan sauce and buttered vegetables
- grilled turkey breast with balsamic, tomatoes and grilled vegetables.
My two favourites from the above are the squid ink pasta, crunchy and tasty with a slightly pepperry sauce, the salmon salad -unique combination of the musrooms, walnuts and paremsan typical of Christmas.
To end it there is the compulsory panatoni bread with chocolate dip and ice cream - so Italian, so Chrismasy.
Value: Substantial and tasty servings that are reasonably priced.
Service: Very attentive and helpful.
Ambience: This place is a separate building from Rochester Mall hence the address 39 Rochester Mall, no unit number. It is in a corner and is quiet with inside and outside dining.
