It's my 'GOOD CAKE'!

I had made a list of its cakes I wanted to order and am slowing ticking them away. There isn't a cake in Singapore I have found to be a 'GOOD CAKE', though some are still pleasant to eat.

My 'GOOD CAKE' is like a piece of art, it has to have it's components blended harmoniously and purposefully. The latter being important because in many cakes, some flavours stand out at the expense of the other, some components being delicious on its own yet let down the whole cake.

For this review, I ordered the Chirstmas Log Cake, which has a rock chocolate (in house experiment product) exterior filled with chocolate mousse, yuzu sabayon, mascarpone and raspberry. There was thin base of feuilletine and a thin layer of chocolate sponge as well.

VISUAL
********

Just stunning, and boxed in a regal black with a gold ribbon.

TASTE
*******

The yuzu sabayon and raspberry added such a dimension to the predominantly chocolate cake - I was quite blown away (not wowed to a faraway land but my cake-loving soul sang a little tune).

The chocolate mousse was so rich and creamy, but neither dense nor dry. A small serving was really more than enough for me (each time that is!)

Chocolate used was dark, slightly bitter (yes!) yet very smooth and not very acidic.

All ingredients were undoubtedly of the high(est) quality!

BUT
*****

There is one thing about the cake I did not like very much about it though - the use of its 'rock choclate'. It provided the support for the cake, and its intensity (taste wise) was such that we couldn't eat too much of it, YET there was just too much of it.

OTHER NOTES
***************
It is expensive but worth every penny for the dedication that the Pastry Chef has put into this creation.

There is a 10% discount for this festive season when you make payment by AMEX credit cards, I think UOB too.

No display front, pre-order is a must (just 1 day in advance), entrance by a press of the bell!

Oh yes, purchased 3 of its (dark) chocolate bons bons.. it was quite good, but I would have prefered the chocolate to have more character. (Perhaps I am pampered after having eaten Amedei's Porcelana earlier)

NEXT UP... Christmas Stocking and Han`ei

Oooohhh la la

Got the most interesting cake from Deste for my best friend's birthday. Had wasabi in your cake before? Neither have I so we decided to brave for it & woah...wonderful caking experience for me, a person who's not into cakes and desserts etc and having my vote for it is rare.

Staff need to be more knowledge as they really have a bad way of describing what's in the cake.
