Risotto
Risotto rice grains - which come in three main varieties: carnaroli, violin nano and arborio - are unique in that they are able to absorb huge amounts of liquids without breaking up or becoming mushy. The ingredients required for making a good risotto dish are simple: good stock, cold butter, grated cheese and Risotto rice. The technique, however, is not. The chef needs to add in the rice, the stock and the main ingredients each at the right time for that perfect, flavorful yet al dente dish.
